The farmers and winemakers of Sicily owe a great deal to the men at COS for laying a foundation of purity and honesty in Sicilian wines. Forever, Sicily was regarded as fertile for fruit, but lacking in quality amongst the great wine regions of the world. This show stopping bottling of Zibibbo by COS is why natural wine, Italian wine and Sicilian wine are all getting the respect they deserve. Knows as Muscat de Alexandria throughout much of Europe, Zibibbo here is bottled dry and with a moment to rest on the skins. At $15 a glass, you will be hard pressed to find a dish that can stand up to something so mesmerizing.
